3 large ripe tomatoes, halved, seeded and coarsely chopped
¹/3 cup loosely packed fresh basil leaves
2 tablespoons tomato sauce
2 tablespoons olive oil
1 tablespoon balsamic vinegar
2 small garlic cloves, crushed
1 teaspoon salt
1 x 100g packet Leafy Patch Baby Cos, torn into bite-sized pieces
40g feta cheese, crumbled

Method
To make the vinaigrette, place tomato, basil, tomato sauce, oil, vinegar, garlic and salt into a food processor. Pulse with on/off motion until blended but still chunky.
Add the vinaigrette to the Leafy Patch Baby Cos in a large bowl and gently combine.
Sprinkle crumbled feta over the mix, divide into 4 bowls and serve at once.
